••• Gardening Herbs: What, Why, How. •••

Herbs are a fascinating group of plants that have beneficial properties, not only for flavoring meals, but also to impart pleasant fragrances, as sources of dyes to color fabrics, as insecticides, as medicines and also as poisons and stimulants. This presentation will deal mainly with herbs used as flavorings (like parsley and chives), for dyes (indigo for blue, and rosella for red), medicines (such as aloe vera to sooth burns, and mint to clear the sinuses) and insect repellents (such as the pyrethrum daisy, chamomile and lavender). With most herbs a little goes a long way which is why it is worthwhile to grow them in pots on a sunny windowsill and on a deck or patio. It makes sense to grow your own because many herbs come from parts of the world with impoverished soils. This makes them easy to grow, surviving long periods of drought, and since many developed their special flavorings or fragrances as a defense against foraging animals and pests, they are relatively trouble-free. In Colonial times an herb garden by the kitchen door was considered a necessity, and today there is a renewed interest in growing and using herbs because herbs fresh from the garden tend to be much more flavorful and healthy for us than the kind sold wilted at the local produce counter, or dried in small glass jars.

Derek Fell is a prolific garden writer and garden photographer with more than 100 garden books to his name. He is also a contributor to many prestigious magazines such as Architectural Digest, Better Homes & Gardens, the New York Times Sunday Magazine, Organic Gardening, the Herb Companion, the Royal Horticultural Society magazine, The Garden and others. At his home, 20-acre Cedaridge Farm, he cultivates a Colonial-style quadrant herb garden and uses herbs as flavorings in many foods that he and his wife, Carolyn (a landscape designer) like to cook. His father was one of the great chef’s of Europe. Fell has won more awards from the Garden Writers Association than any other person and he has written three books on herbs: The Beginner’s Book of Herb Gardening (Friedman), Let’s Investigate Herbs (Creative Education), Essential Herbs (Arch Cape Press), and Herb Gardening with Derek Fell (Friedman).
